- I have just returned from a trip to Israel, and came with a great recipe
- for a simple, yet delicious vegetable pie. Ready?

- 3-4 large carrots
- 4-5 large zucchini
- 2-3 large raw potatos
- 1/2 an onion

- Coarsely grate/chop, and then add the following ingredients

- 3 eggs
- 1 large container cottage cheese
- 1 box/'cake' feta cheese
- 8 oz. plain yogurt
- basil, oregano, black pepper - as you like it.

- Put the mixture in a greased pan, and bake, medium heat, for about 45
- minutes. That's all there is to it.

- Variations on the theme?
- There are endless variations. You can omit the eggs if you are cholesterol
- conscious; you may add any sharp cheese (cheddar goes well); you may mix
- and match with alternative vegetables (broccoli, cauliflower, spinach etc.),
- You may replace the yogurt with sour cream, or combine some of each. You
- may come with more variations as you go along!
